Baba's Kesari Mix is a ready blend of semolina, sugar, vermicelli, raisins and cardamom from Baba's of Malaysia, the spice brand found in Malaysian, Singaporean and Tamil kitchens alike. Kesari is the golden semolina sweet made for pujas, birthdays and every festival on the calendar, and this pack has everything in it except the water and ghee.
How to use it
The pack calls for 800ml of water and 250ml of ghee for the whole 450g bag. Bring the water to the boil, tip in the kesari mix and stir well over a medium flame for about two minutes. Add the ghee and keep stirring until the mixture thickens and pulls away from the pan. Transfer to a greased tray, level the top, leave to cool, then cut into diamonds and serve. For Navratri prasad or a Diwali platter, press a cashew into each piece before it sets.
