Alagappa's Kesari Mix is a ready blend of semolina, sugar, cashew and kesari colouring from Alagappa Flour Mills of Penang, Malaysia, the "Curry King" brand trusted since 1943. Kesari, also called rava kesari or sheera, is the golden semolina sweet offered as prasad and served at every South Indian celebration, and this mix takes the measuring out of it.
How to use it
The pack method is simple. Bring two cups of water to the boil with a little salt, then add one cup of kesari mix and stir for about five minutes so no lumps form. Add ghee, allowing one cup of ghee for the full 450g pack, and keep stirring until the kesari leaves the sides of the pan. Pour onto a greased tray, smooth the top and cut into diamonds once cool. For Navratri or Diwali, finish with fried cashews and raisins and a pinch of cardamom.
