How to use it

For a tadka, heat ghee or oil until it shimmers, add a teaspoon of cumin and let it sizzle and darken slightly before adding onion, garlic or chilli. Jeera rice needs only a spoonful of seeds fried in ghee before the rinsed basmati and water go in. Dry roast a cupful in a heavy pan until fragrant, cool and grind for roasted jeera powder to sprinkle over raita, chaat and buttermilk. On Navratri fasting days, cumin is one of the few spices used, in sabudana khichdi, vrat aloo and samak rice.
