Samayal Cashew Kernels are whole, pale cashews from Vietnam, packed in a generous 750g bag by Haran Foods. How to use it
For kaju katli, grind the cashews to a fine powder in short pulses, cook with sugar syrup until the mixture leaves the pan, then roll thin and cut into diamonds. Soak a handful in hot water and blend to a smooth paste to enrich shahi paneer, korma and makhani gravies. Fry whole cashews in ghee until golden to finish kheer, sheera, pulao and upma, or roast them with rock salt and black pepper for a simple Navratri fasting snack. Keep a dish of them out with dry fruit when guests arrive at Diwali.
