Maliban Instant Full Cream Milk Powder is a spray-dried whole milk powder made from cow's milk, with 28% fat and a little soya lecithin so it dissolves quickly in hot or cold water. Made in Holland for the Sri Lankan brand Maliban, it is the family-size tin that sits in many South Asian kitchens for morning tea, milky desserts and festive sweets. This 2.5kg tin makes about 19 litres of milk.
How to use it
For a glass of milk, stir 26g (two heaped tablespoons) into 180ml of water; for a litre, dissolve 130g in 900ml. During Navratri and Diwali the powder is a quick route to sweets: cook it with ghee, a splash of milk and sugar over a low flame until it leaves the sides of the pan to make milk powder barfi or peda, or whisk a few spoonfuls into kheer and payasam for a richer finish. It also works in masala chai, coffee and cakes.
