Kaaviya Foods Dried Ginger is whole sun-dried ginger root, called sukku in Tamil and saunth or sonth in Hindi. Drying turns fresh ginger into pale, fibrous knobs with a warmer, more peppery heat, and the whole pieces keep their aroma far longer than ready-ground powder. This 100g pack is a product of India, packed in Enfield.
How to use it
Pound a piece in a mortar or grind it in a spice mill just before use. For sukku coffee, simmer a teaspoon of the powder with crushed pepper, coriander seeds and palm jaggery in water, then strain. Ground saunth goes into sonth chutney with tamarind and jaggery for Diwali chaat, into panjiri and gond ladoos, and into masala chai with cardamom and cloves. A small piece also flavours rasam and kashayam.
