Heera Whole Turmeric is haldi in its root form: dried turmeric fingers, hard and golden brown outside with a deep orange core. Ground fresh, whole turmeric gives a brighter colour and a more fragrant, earthy flavour than most ready-ground powder. Whole haldi also has a place in Hindu ritual, offered at puja, used in haldi ceremonies and tied into the auspicious bundles prepared for festivals. The 100g bag holds a good handful of fingers.
How to use it
Break the fingers into small pieces with a pestle, then grind them in a strong spice grinder to a fine powder and sieve. Use a quarter of a teaspoon to colour and season dal, sabzi, rice and curries, adding it to the hot oil with the other spices so the raw taste cooks out. Simmer a pinch in milk with black pepper and jaggery for haldi doodh. Whole pieces can also be added to pickles. Turmeric stains, so use a dedicated grinder.
