Heera Jaggery is natural, unrefined cane sugar set into a traditional block, the gur that sweetens Indian cooking from Punjab to Kerala. Sugar cane juice is simmered until it thickens and sets, so the jaggery keeps its golden colour and warm caramel and molasses notes. The 900g block is a practical size for a household that cooks with gur every week.
How to use it
Shave or crush the block with a heavy knife, then measure by weight. For a quick gur ka halwa, roast 100g of semolina in two tablespoons of ghee until golden, add 300ml of hot water with 100g of grated jaggery dissolved in it, and stir until thick and glossy. Finish with cardamom and chopped nuts. Jaggery also goes into tamarind chutney, sambar, gur chai and sesame ladoos for Diwali, and a small piece after a meal is an old habit in many homes.
