Fudco Cashew Nuts are whole cashew kernels packed in the UK in a 250g bag. Fudco describes them as selected for an exquisite, creamy taste, and they are the cashews to buy when Diwali means kaju katli, a dry fruit platter for visitors and a rich shahi gravy all in the same week.
How to use it
For kaju katli, grind 250g of cashews to a fine powder in short pulses so they do not turn oily. Dissolve 125g of sugar in 60ml of water, cook to a one-string syrup, add the powder and stir over a low heat until it forms a soft dough. Knead with a little ghee, roll thin between sheets of baking paper and cut into diamonds. For curries, soak the cashews in hot water and blend smooth. For snacking, roast in a dry pan until lightly golden.
