Fudco Brown Sultana are dark, plump dried grapes lightly coated in sunflower oil to keep them loose in the bag. The country of origin is China, and the 250g pack is packed in a protective atmosphere. Sultanas, or kishmish, go into almost every Indian festive sweet, from Navratri kheer and sooji sheera to the Diwali dry fruit tray.
How to use it
For kheer and payasam, add a small handful of sultanas in the last five minutes of simmering so they plump without splitting. For sheera, fry the sultanas briefly in ghee until they puff, lift them out, then roast the semolina in the same ghee and stir them back in at the end. They also work well in pulao and biryani, in carrot halwa, and in fruit cake and festive bakes. If the sultanas feel firm, soak them in warm water for ten minutes and pat dry before using.
