Shankar Upma Rava is coarse wheat semolina milled for the South Indian breakfast of the same name. The grains are larger than fine sooji, so they stay separate and fluffy when cooked instead of turning to porridge, which also makes this rava a good choice for rava idli, rava kichadi and savoury pongal. It is a product of India, packed in a 1kg bag by Shankar Foods in London.
How to use it
Dry roast the rava in a pan over medium heat for four to five minutes until it smells nutty, then set aside. In the same pan, heat oil and splutter mustard seeds, urad dal, curry leaves and dried red chilli. Fry chopped onion, ginger and green chilli until soft, add two and a half cups of water per cup of rava with salt, and bring to a rolling boil. Pour the rava in slowly while stirring, cover and cook on low until the water is absorbed. Rest for two minutes, fluff with a fork and finish with ghee, lemon juice and coriander.
