Red kidney beans, cooked and ready in salted water, 240g drained. Dried rajma needs a night of soaking and a hard boil before it is safe to eat, and a tin does away with both, which is why so many Punjabi households keep a few in the cupboard for a weeknight rajma chawal.
How to use it
Fry onion, ginger, garlic and green chilli, add tomatoes and rajma masala, then the drained beans with a cup of water and simmer for fifteen minutes, mashing a few against the side of the pan to thicken the gravy. Serve with plain basmati. The same tin makes chilli con carne, Caribbean rice and peas and a three bean salad.
