Pillsbury Chakki Atta is 100% whole wheat flour, ground the traditional chakki way between stones so it keeps the bran and the fine, slightly coarse texture that makes rotis soft and full of flavour. General Mills make it in India, and the new recipe is designed to keep rotis soft for hours after cooking.
How to use it
Mix about 100g of atta with 75ml of water to make a soft dough, knead it smooth and rest it for ten minutes. Divide into lemon sized balls and roll them out evenly, dusting with dry flour. Cook on a hot tawa until brown spots appear on both sides, then hold over a flame or press with a damp cloth so the roti puffs. Brush with ghee and keep wrapped in a cloth. The same dough makes parathas, puris and thepla.
