RUS C Roasted Rice Flour is made the traditional way: rice is soaked, hand pounded and then roasted, as it has been in Sri Lankan and South Indian homes for generations. Pounding gives a softer, finer flour than machine milling, and roasting makes it ready for steaming straight from the bag.
How to use it
For string hoppers, bring salted water to a rolling boil and pour it gradually over the flour, stirring with a spoon until a soft dough forms. Knead while warm, press through an idiyappam mould and steam for about eight minutes. For pittu, rub in warm water and grated coconut until the crumbs hold together, then steam. It also makes rice rotti, kozhukattai and appam. Cook the flour before eating.
