Broken wheat, also called cracked wheat or dalia, is whole wheat grain cut into small pieces. It keeps the bran, so it cooks into a nutty, chewy grain that is more filling than semolina. In South India it becomes godhumai rava upma and pongal; in the North it is sweet dalia, lapsi and savoury khichdi.
How to use it
Rinse the wheat and dry roast it in a little ghee until fragrant. For a savoury dalia, add a tempering of cumin, onion, vegetables and green chilli, then three cups of water to each cup of wheat, and pressure cook for two whistles or simmer until soft. For sweet lapsi, cook it in milk or water with jaggery, cardamom and nuts. It also works in salads and soups.
