Niru Steamed Flour is wheat flour that has been steamed, made in Canada for the Sri Lankan Tamil kitchen. Steaming changes the way the flour takes water, so it forms the separate, fluffy crumbs that pittu needs and a soft dough for string hoppers, mothagam and kolukattai.
How to use it
For pittu, add warm salted water a little at a time and rub it through the flour with your fingertips until it holds together when pressed but breaks apart again easily. Layer with grated coconut and steam for eight to ten minutes. For string hoppers, scald the flour with boiling water, knead to a smooth dough and press through an idiyappam mould before steaming. For roti, knead with water, salt and a little oil.
