Niru Roasted Red Rice Flour 3.6kg

Roasted red rice flour is finely ground red rice that has been dry roasted, the everyday flour for Sri Lankan string hoppers (idiyappam), rotti and kozhukattai. Roasting takes away the raw taste and lets the flour absorb boiling water evenly, so the dough presses smoothly through the mould. The red rice gives a light brown colour and a fuller flavour than white flour.

How to use it

Bring salted water to the boil and pour it over the flour while stirring with a wooden spoon until it comes together. When cool enough to touch, knead to a soft, smooth dough, press through an idiyappam mould onto oiled trays and steam for about eight minutes. Serve with sothi, dhal or a seeni sambol. For rotti, knead the flour with grated coconut and water and cook thin rounds on a hot tawa.
