Jalpur Ondhwa Flour 1kg

Ondhwa flour is the lentil and rice mix behind handvo, the savoury Gujarati cake baked with grated vegetables and a crisp sesame crust. Jalpur mill it in Leicester from chana dal and rice with a little turmeric, so the batter comes out golden before anything else goes in.

How to use it

Whisk the flour with yoghurt and warm water into a thick batter and leave it to ferment overnight. In the morning stir in grated bottle gourd or carrot, peas, ginger, green chilli, sugar and salt, then a pinch of bicarbonate. Pour into an oiled tin, top with a tempering of mustard seeds, sesame and curry leaves, and bake until the top is deep brown and a skewer comes out clean. The same batter cooks in a covered pan on the hob, or in small rounds for ondhwa pancakes.
