Suryaa String Hoppers Flour White 1kg

Suryaa String Hoppers Flour White is white rice flour milled to the fine, even texture that idiyappam needs. The strands press out smoothly, steam quickly and come out soft and white, the classic string hopper served across Sri Lanka, Tamil Nadu and Kerala. The flour is ready for the dough straight from the bag. It is a product of India, imported by Niru (Europe) in Mitcham.

How to use it

Measure the flour into a bowl with salt and add boiling water gradually, mixing with a spoon until the flour is wet through, then knead while warm to a smooth dough that is soft but not sticky. Press through an idiyappam mould onto oiled trays or banana leaf in loose spirals and steam for six to eight minutes until the strands are set and springy. Eat them hot with kiri hodi, egg curry or chicken curry, or sweet with grated coconut and jaggery. The same dough makes pittu if you leave it crumbly.
