Shankar Steamed Wheat Flour is wholewheat flour that has been steamed and dried before packing, the form Sri Lankan and Tamil kitchens use for pittu and wheat string hoppers. Steaming sets the starch so the flour takes water evenly and forms soft, separate crumbs instead of a sticky paste. It is a product of India, imported and packed for the UK by Shankar Foods in London.
How to use it
For pittu, put the flour in a wide bowl and sprinkle over warm salted water a little at a time, rubbing it through your fingers until it forms damp crumbs that hold together when squeezed but break apart easily. Layer the crumbs with freshly grated coconut in a pittu bamboo or steamer and steam for eight to ten minutes until steam rises freely from the top. Serve with coconut milk and a hot curry. For string hoppers, scald the flour with boiling water, knead to a soft dough and press through an idiyappam mould onto steaming trays.
