Wheat rava, sold in Tamil Nadu as samba rava, is whole wheat cracked into small golden granules. It keeps the bran, so it cooks into a nutty, chewy grain that is more filling than semolina. It is the base of godhumai rava upma, wheat pongal and kichadi, and a favourite breakfast for anyone cutting back on white rice.
How to use it
Dry roast the rava in a little ghee until fragrant. For upma, temper mustard seeds, urad dal, curry leaves, ginger and green chilli, soften onion and vegetables, add about two and a half cups of boiling salted water per cup of rava, then stir the rava in, cover and cook on low until tender. For wheat pongal, cook it with moong dal and finish with ghee, black pepper and cumin.
