Maida is finely milled, refined white wheat flour with the bran removed, which makes it softer and stretchier than chapati atta. Samayal pack theirs in a handy 1kg bag, labelled for rotis, chapatis, parathas and puris, and it is the flour to reach for when you want flaky layers or a crisp fried pastry.
How to use it
For Kerala parotta, knead the flour with warm water, a little sugar, salt and oil into a very soft dough and rest it for two hours before stretching, coiling and rolling. For samosa and kachori pastry, rub hot oil or ghee into the flour until it clumps, then bind with cold water to a firm dough. Maida also makes naan, bhatura, nankhatai and simple sponge cakes.
