One ingredient, butter oil, and nothing else in the tin. Real butter ghee carries a nutty, cooked-cream smell that vegetable ghee never manages, and it takes a high heat without burning, which is why it is what goes into the tarka and what gets spooned over the dal at the table. The 500g tin is the size a household gets through in a season without it sitting open too long.
How to use it
Melt a spoon in a hot pan for the tarka, use it in place of butter for parathas and shallow frying, and finish dal, khichdi or sarson ka saag with a little more off the heat. It is also the fat for mithai and for baking where you want the flavour to come through.
