Natco Peeled Plum Tomatoes 400g

Whole Italian plum tomatoes in their own juice, 60% fruit, with nothing in the tin but tomato and a little citric acid. Whole tomatoes give you more control than chopped: you crush them into the pan with your hand or the back of a spoon, so you decide whether the sauce stays rough or cooks down smooth. For a masala you want the oil to separate from, that matters.

How to use it

Crush them into a hot pan of browned onion and ginger garlic paste and cook until the oil pulls away at the edges, about ten minutes, before anything else goes in. They are equally at home in a Neapolitan sauce, a shakshuka or a slow beef stew. Salt them at the end rather than the start.
