The same 100% butter ghee as the smaller tin, in the size a household that makes parathas on a Sunday actually works through. Nothing in it but butter oil, so it smells of cooked cream rather than of nothing, and it holds a high heat without catching.
How to use it
A spoon in a hot pan for the tarka, in place of butter for parathas, puris and shallow frying, and a little more spooned over dal or sarson ka saag at the table. It keeps for six months in the fridge once opened, so a kilo is not the commitment it looks.
