Makki atta is yellow maize ground to a fine flour, and in Punjab it means one dish above all: makki di roti with sarson ka saag. Heera’s desi makki atta is 100% corn flour with a sweet, toasty flavour.
How to use it
Knead the flour with hot water and a pinch of salt into a soft dough, then pat small balls into rounds between your palms or on a sheet of cling film. Cook on a hot tawa until spotted on both sides and finish with a generous dab of butter or ghee. A little grated radish or methi in the dough keeps the rotis soft.
