Cassava flour is ground from the dried root of the cassava plant, known as tapioca in South India and manioc across Africa and the Caribbean. Heera’s flour is bright white and very fine, with a neutral flavour and almost no fat.
How to use it
Stir the flour into boiling water and beat it until smooth and stretchy for fufu, to serve with light soup, egusi or okra stew. It also makes flatbreads, Kerala style kappa puttu, pancakes and a crisp coating for frying, and bakers use it to replace part of the wheat flour in cakes and cookies.
