Moraiyo is the Gujarati name for little millet, the small grain many families turn to on fasting days when wheat and rice are set aside. Annam mill it into a soft, pale flour with a mild, faintly sweet flavour, and the bag holds nothing else.
How to use it
Bind the flour with mashed potato, green chilli, cumin and rock salt, then roll out small rotis or thalipeeth and cook them on a hot tawa with a little ghee. It also makes a quick farali dhokla, a batter for pakoras on vrat days, and a light porridge cooked in milk with jaggery.
