Chickpeas boiled in salted water, 240g drained from a 400g tin, and about as cheap as a tin of chana gets. They are already cooked, so chole is a matter of building the masala and letting the chickpeas take it on, with no overnight soak. These are standard calibre and soften into the sauce; if you want them whole and visible, take the Natco jumbo instead.
Drain and rinse, then simmer in onion, tomato, ginger and garam masala. Cold, they go into a chana chaat with potato, onion and tamarind chutney, or into hummus with tahini, lemon and a spoonful of the liquid from the tin. Roasted with oil and chaat masala they crisp up as a snack.
