Annam peanut oil 1L is a clear, faintly sweet groundnut oil in a litre bottle, and the one to reach for when deep frying is on the menu. It takes a high heat without breaking down, and it carries its own flavour far less assertively than sesame oil, so the spice leads. Pick it over sunflower oil for the slightly rounder, nuttier background of South Indian and Gujarati frying, and over sesame oil when the oil should not be tasted at all.

How to use it

Heat it to around 180C for vada, bhaji, bonda, murukku and puri, and let it come back up to temperature between batches so the outside crisps before the inside soaks. It also suits a kadai stir fry or a poriyal, and a spoonful makes a clean tarka. Do not pour hot oil back into the bottle.
