Pat it out between your palms or on a sheet of oiled plastic to a thick round, then cook slowly on a tawa with a little ghee until golden and spotted on both sides. Serve with sarson da saag and white butter. For a soft porridge, whisk one part cornmeal into five parts boiling salted water and simmer for 15 minutes.
