For chevdo, fry peanuts, curry leaves, green chilli, turmeric and hing in a little oil, add the mumra with salt and a pinch of sugar, and stir over a low heat until coated. Jhal muri needs only mustard oil, onion, green chilli, coriander and a squeeze of lemon.
