It thickens sweet and savoury sauces to a smooth, glossy finish, gives fried food a light and crisp coating and softens the crumb of cakes and biscuits. It is gluten free and carries the Crossed Grain mark, so it suits coeliac baking too. Always slake it in cold liquid first so it does not form lumps. A light dusting before frying gives chilli chicken, gobi manchurian and salt and pepper wings a crisp shell, and a spoonful seals in the flavour of grilled meat and fish. For lighter cakes, use 4 parts plain flour to 1 part cornflour, and for melt in the mouth pastry and shortbread, 2 parts plain flour to 1 part cornflour.

Good to know

Single ingredient: cornflour

Gluten free, suitable for coeliacs

Recipes for wings, shortbread and teriyaki sauce on the pack

Keep in an airtight container once opened

//cdn.shopify.com/s/files/1/1101/7433/9411/files/brown-and-polson-cornflour-250g-front.png?v=1792312763
