Coriander and red chilli give the gravy its body and colour, while fennel, fenugreek, mustard and cumin add the warm, slightly bitter notes typical of South Indian fish curries. Ground rice helps thicken the sauce, and salt is already in the mix. It is made in India and packed in a 100g carton. Heat a tablespoon of oil and saute two chopped onions, two small tomatoes, 7 to 8 garlic pods and a sprig of curry leaves. Pour in the tamarind water with salt and a tablespoon of the masala, and simmer until the gravy thickens slightly. Slide in 300g of cleaned fish pieces and cook gently until done. Serve with steamed rice. Firm fish such as kingfish or pomfret hold their shape best.

Good to know

Contains mustard

Made to pair with tamarind for a sour, spicy gravy

One pack recipe serves 6 to 8 people

Product of India, imported by BTM International UK Ltd
