The single ingredient is organic coconut sap, and the pack lists no additives or artificial flavours. It tastes of light caramel with a soft toffee note, closer to jaggery than to white sugar, and it pours and measures like ordinary granulated sugar. Use it spoon for spoon in place of brown sugar in cakes, cookies and granola. In South Asian cooking it suits sweets that usually take jaggery, such as payasam, wattalappan, kozhukattai filling and coconut barfi, and it dissolves quickly in tea, coffee and milk. A pinch also rounds off the sourness in a tamarind curry or a sambol.

Good to know

Single ingredient: organic coconut sap

Single origin Sri Lankan coconut, labelled vegan and non GMO

EU and USDA organic marks on the pouch

Once opened, keep it in an airtight container so it stays free flowing

//cdn.shopify.com/s/files/1/1101/7433/9411/files/7ray-organic-coconut-sugar-500g-front.png?v=1791973880
